Decadence... So today’s diet was a little rough, as I did not eat a single thing that made me full. I have had a raging sweet tooth for part of the day.. * will not give in, I am committed to healthy! * however, I decided to get creative and treat myself to something decadent.
As, the only sugar I am eating is coming naturally from fruit.. so I placed some juicy fresh, raspberries in a champagne glass and topped it with frothy coconut milk I had placed in the fridge to thicken up. (If you buy a can of coconut milk, set it in the fridge overnight, in the morning open the can, scoop out the thickened milk and discard the water!) Voila! A natural, healthy, sugar free whipped cream. I topped with a smidge of fresh cinnamon and I had an amazing dessert to end a hectic day.

So, today in between two shifts at work.. *yawn*.. my tummy was hungry and I wanted something snacky & savory. A salad wasn’t going to cut it today. So I decided to look at my food plan and see what foods I could eat today. I am currently on a 4-day rotation diet to heal my tummy. Mr. Charming actually made it really fun, so that I don’t get overwhelmed, and made a pretty color coded menu (he knows me so well!) and we are almost finished with our chalkboard fridge! (A post on that process is planned..) So, I could have onion today and got a craving for some delicious onion rings. However, I am gluten & dairy free and can’t have egg again yet so I got creative. I had a sweet yellow onion so I cut them up real nice like. side note: what IS it about onion that makes your eyes feel like they are going to burn out of your sockets? yeah. it’s horrible. Anyways. I gave my onions a nice little unsweetened coconut milk bath and then tossed them in tapioca flour and fried them up in the little mini fryer Mr. Charming and I got for our wedding. They were SO delicious. I ate the whole pile. ;/ I didn’t feel guilty though. Thats how GOOD they were. && they were SWEET. the sweet onion paired with the sweetness of tapioca flour and the subtle hint of coconut it was amazing. I highly recommend giving them a try! |
